Apricot Sage Cookies

1 cup sugar
3 Tbs chopped fresh sage
1 cup butter
1 egg
1/2 cup chopped dried apricots
2 cups flour
1/2 cup cornmeal
1 tsp baking soda
1 tsp vanilla

Preheat oven 350


Combine sugar with chopped fresh sage in food processor, add butter and combine, then add egg and mix well. Add chopped dried apricots. Add flour, cornmeal and baking soda, then vanilla.

Roll into two logs, wrap and refrigerate overnight. Slice, sprinkle with sugar
