Aunt Edna's Bay Leaf Caramels

1c butter
1 1/4c brown sugar
1c sugar
1 1/4c corn syrup
1-14oz sweetened condensed milk
1bay leaf
1c chopped toasted pecans (optional)


Line a 9" square pan with heavy duty aluminum foil and butter. 

Melt butter over low heat, then add both sugars, corn syrup and condensed milk and stir until sugar dissolves. 

Add bay leaf, increase temperature to medium and bring to a boil then cook 8 mins. 

Remove bay leaf and continue cooking stirring frequently until candy thermometer registers 242 degrees or about 5 minutes longer.  Immediately remove from heat and stir in pecans then pour into prepared pan. 

Cool until firm or about 1 hour.  Score using a buttered knife, lift out caramels and peel foil off bottom, then cut into pieces and wrap in celophane.  Store in airtight container.
