Chicken Roasted in Bay Leaves

1 whole roasting chicken
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
16 bay leaves
4 celery stalks, halved lengthwise and crosswise
2 carrots, peeled and halved


Preheat oven to 375°.

To prepare chicken, remove and discard giblets and neck from chicken. Starting at neck cavity, loosen skin from breasts and drumsticks by inserting fingers, gently pushing between skin and meat. Mix salt and pepper together and rub under loosened skin and over breasts and drumsticks. Place 8 bay leaves under loosened skin; place remaining 8 bay leaves in cavity.

Place celery and carrot in a single layer in a roasting pan. Place chicken, breast side up, on top of vegetables.

Bake at 375° for 40 minutes or until chicken juices run clear
