Chamomile Biscotti

1 Tbls Chamomile
1/4 cup water
1 orange - zest and juice
2/3 cup sugar
2 eggs
3 Tbls honey
1/2 tsp vanilla
2 1/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup powdered sugar


Preheat oven to 350°


Steep 1Tbs Chamomile in 1/4 c boiling water and the juice of 1 orange for 10 minutes, then strain and cool.

Whisk together 2/3 c sugar and 2 eggs, then stir in 3Tbs honey, 1/2 tsp vanilla, zest of an orange & 1Tbs of the chamomile tea mixture. Add in 2 1/4 c flour, 1 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt, folding just until combined.

Divide batter in half and form each into a log and place on greased cookie sheet.


30 minutes, allow to cool 10 minutes

Reduce oven temperature to 325 degrees

Cut logs diagonally into 1/2 “ slices. Return to cookie sheet and bake for another 10 mins., turning once.

Cool then drizzle with a combination of 1 c confectioner’s sugar and 2Tbs of chamomile tea mixture.
