Greek-Style Cucumber & Tomato Salad

2 cucumbers, sliced
1lb tomatoes, cut into wedges
½ red onion, sliced thin
1 red bell pepper, roasted and peeled & sliced into strips
1/2c black olives
Salt & pepper to taste
8oz feta cheese, crumbled
1/4c olive oil
2Tbs red wine vinegar
2 cloves garlic, minced
2Tbs chopped fresh oregano


Combine vegetables and season with salt & pepper. Sprinkle about 2/3 of feta over vegetables.

In a small bowl combine oil, vinegar, 1/4tsp salt, garlic and oregano and stir well. Add black pepper.

Drizzle 2/3 dressing over vegetables and toss well. Sprinkle remaining feta on top, garnish with olives & drizzle with remaining dressing. Serve at room temperature.
