Green Goodness Dressing

2 cups packed parsley leaves
Juice of 1 lime or lemon
1 Tbsp white wine vinegar
2 garlic cloves, crushed
1 tsp Dijon mustard
1/2 tsp salt
1 cup olive oil


Blend all ingredients at low speed in a blender for 1 minute and at high speed for 30 seconds, or until mixture is bright green. Adjust the seasoning with lemon juice, vinegar or salf if necessary. Keeps covered and chilled for 1 week. Stir before using.
