Lemon Basil Potatoes

16 new potatoes, halved or quartered
2 cup chicken stock
1/2 cup fresh lemon juice or juice of 1 lemon
2 Tbls olive oil
1 tsp kosher salt
1/4 tsp ground black pepper
1 tsp lemon zest
1/4 cup chopped fresh basil leaves or lemon-basil leaves


Place potatoes, chicken stock, lemon juice, olive oil, salt and pepper in saucepan. Bring to a boil over medium-high heat and simmer until potatoes are tender, about 20-25 minutes.

Drain and place in serving bowl. Drizzle with olive oil, add lemon zest and basil - reserve some to use as garnish if desired.
