Peach Melba

1can peach halves
3Tbs fresh lemon juice
12 macaroon cookies
1Tbs butter
1tsp chopped fresh sweet marjoram
1/2c beautyberry jelly or raspberry jam
6 sprigs sweet marjoram


Preheat broiler.

Brush each peach half with lemon juice and place cut side up on greased baking sheet.

In food processor, chop cookies, butter and sweet marjoram about 30 seconds or until combined. Divide crumbs and spoon into peach halves.

Broil 2-4 mins or until lightly browned.

Heat jam in microwave 30 seconds. Spoon hot jam onto dessert plates, top with peach half and garnish with a sprig of fresh marjoram.
