Spaghetti with Herbs
  • 1 Tbls fresh sage, minced
  • 1 Tbls fresh mint, minced
  • 1 Tbls fresh rosemary, minced
  • 1 Tbls fresh parsley, minced
  • 2 large, ripe tomatoes, peeled and seeded
  • 1 pound thin spaghetti or linguine
  • Water for boiling pasta
  • 1/4 cup olive oil
  • Salt, freshly ground pepper and grated Parmesan


  1. Mix the herbs together in a large bowl. Chop the tomato and add it to the herbs
  2. Bring a large pot of water to a rolling boil. Add the pasta and stir with a spoon. Cook until al dente, about 8 minutes at full boil
  3. While pasta is cooking, heat the oil until very hot. Drain the pasta and immediately pour the hot oil over the herbs so they sizzle. Turn the pasta into the bowl of herbs, mix together, and serve at once. Add salt, pepper and Parmesan to taste.
