Summer Pasta Salad
Ingredients

1 pound elbows or other small pasta
2 Tbl olive oil
1/2 tsp black pepper
1/2 cup minced fresh herbs: basil, chives, parsley, oregano
1 med cucumber seeded, peeled, chopped
1 ripe tomato cored, seeded & cut into 1/4-1/2 cubes
1 small red onion finely chopped


Preparation

Cook pasta in plain water, drain, rinse - drain & rinse again. Transfer to bowl - add olive oil, herbs and black pepper. Add onion, cucumber and tomato - toss well. Serve at room temp.
