Lavender Sorbet

1 cup sugar
2 cups water
1 Tbls lavender
2 1/2 Tbls freshly squeezed lemon juice
2 Tbls vodka



In a medium saucepan over medium heat, combine sugar and water until the sugar dissolves. Add lavender; stir until comes to a boil; reduce heat to low and simmer 5 minutes. Remove from heat, cover and let stand for 10 minutes.

Strain mixture into a bowl - add lemon juice and vodka, stir until blended.

Pour into container, cover and place mixture in freezer for a few hours or overnight. When ready to serve mash with fork, you can always put in food processor or blender if you would like more uniform. Cover and refreeze until serving. Can be made 3 days in advance.
