Lemon Fennel Butter

1 stick softened butter
2 Tbls chopped fennel leaves
Grated zest of lemon
Ground pepper



Combine and beat until evenly mixed.  Smooth onto plastic wrap or wax paper and roll into a 2” log, then chill to firm.  Cut into pats and serve with fish, cooked vegetables or melted & drizzled over popcorn.
