Lemon Fennel Iced Tea

2 gallons water
honey or sugar to taste - 1/2 to 1 cup
1/2 cup fennel seeds
6 family style tea bags
zest of lemon - using vegetable peeler
lemon juice to taste



In pot combine 1 gallon water with fennel seeds and bring just to boiling. Turn off burner, add tea bags and zest. Let steep for 20 minutes. Stir in honey or sugar and lemon juice.

Strain into pitcher and cool. Have other gallon of water cool. To serve, mix tea and water.

This makes 2 gallons of tea
