Lemon Thyme Cookies

1 cup butter or margarine, softened
1 ½ cups granulated sugar
2 eggs
2 ½ cups unbleached flour
1 teaspoon cream of tartar
½ teaspoon salt
5 tablespoons finely chopped fresh lemon thyme


Preheat oven to 350°


Cream the butter with the sugar, add the eggs, and mix well.

Sift together the flour, cream of tartar, and salt.

Stir the flour mixture into the butter, sugar, and eggs until well blended, then add the lemon thyme.

Chill overnight or until firm enough to roll.

Roll the chilled dough into 1-inch balls and bake on a greased cookie sheet for 10 minutes, or until lightly browned.
