Crushed Mint Lemonade

6 large lemons, scrubbed, thinly sliced
1 small bunch of fresh mint

1 1/4 cups sugar
1/2 cup fresh lemon juice
2 cups water
ice cubes

Using a potato masher (I used a pastry blender), mash sliced lemons, mint, 1 cup sugar and 1/2 cup lemon juice in a large bowl until juicy, about 5 minutes. Strain lemon mixture through coarse sieve/strainer set over another large bowl, pressing masher on solids in sieve to extract some pulp and as much liquid as possible. Mix 2 cups water and remaining 1/2 cup sugar into lemon liquid in bowl. Fill pitcher with ice; pour lemonade over ice. Let stand 5 minutes and serve.

This was the basic recipe from The Herbal Garden that we used as a guideline. I juiced 6 lemons and sliced 3 lemons to mash with mint and sugar. This made a nice syrup to mix with water (we were making a gallon). Add water to taste, you can also adjust sugar to taste. If you don't have enough lemons, you can substitute concentrated lemon juice.

We use different types of mint (chocolate mint, peppermint, spearmint, etc) for this recipe and sometimes use limes.

For ease of juicing lemons have at room temperature and roll firmly between countertop and hand or place in microwave for 5 to 10 seconds.
