Tabbouleh
Ingredients

1/2 cup fine cracked wheat (bulger)
2 large tomatoes, diced
2-3 green onions, chopped, white and green parts
1/2 bunch mint chopped
1 large cucumber, peeled, seeded and chopped
1/2 cup olive oil
Juice of 3 lemons
1 Tbsp salt
1/2 tsp pepper

 

Preparation

Place cracked wheat in a large bowl. Add all chopped vegetables and herbs, mix well. Add oil, lemon juice, salt and pepper.

Allow to soak and absorb the flavors - about an hour.
