Thyme and Mustard Crackers

1 1/2 cup whole wheat flour
1/2 cup oatmeal
2 Tbls sugar
2 tsp baking powder
2 Tbls fresh thyme leaves
fresh ground pepper
4 Tbls butter
2 Tbls vegetable shortening
3 Tbls milk
2 tsp Dijon mustard
2 Tbls sesame seeds (optional)

Preheat oven to 400°


Mix flour, oatmeal, sugar, baking powder, thyme leaves and seasoning. Cut the fats into pieces and add to the flour mixture, then rub in to form fine crumbs.

Mix the milk and mustard together, stir into flour mixture and continue mixing until you have a soft but not sticky dough. Adjust with flour or milk to get desired consistancy.

Knead lightly on a floured surface, roll out to 1/4 inch thickness. Stamp out 2 inch rounds or any other shape you desire.

Arrange spaced slightly apart on greased baking sheets.

Prick crackers with fork and sprinkle with sesame seeds


10-12 minutes until lightly browned, alternating backing sheets on the oven shelves during cooking for an even color.
