Tzatziki - Mint Cucumber Yogurt Dip

1 cucumber, peeled, seeded
1 (16 oz) container low-fat plain yogurt or Greek style
1 clove garlic, minced
1/4-1/3 cup chopped mint leaves
1 Tbls fresh lemon juice (optional)

salt and pepper to taste


Night before: line a colander with two layers of cheesecloth and place over a medium bowl. Place yogurt on the cheesecloth, cover with plastic wrap. Allow yogurt to drain overnight. If you are using Greek style yogurt you can skip this step.

Mince the cucumber and put in strainer. Sprinkle a little salt over it and mix in. Let drain for at least 10 minutes, then squeeze down to get as much juice out as possible.

Combine yogurt, cucumber, garlic, mint, lemon juice, salt and pepper. Refrigerate for at least 2 hours before serving.

You can also add fresh chopped parsley.
